Serves 10 guests

To make the Clementine Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Drink (produces 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Method

Making the Syrup: Place all the ingredients in a pan, bring to a simmer, stirring to dissolve. After that, take off the heat and leave to reach room temperature entirely. Pour to a clean bottle, cap it and refrigerate it chilled, it can be stored for about a month.

For the Cocktail Base: Mix the specified spirits and syrup into one large bottle, leave to sit for 60 minutes, then strain best through muslin, so it's perfectly clear.

When ready to serve: Add 85ml from the batch mix into a stirring glass filled with ice, gently stirring gently for one minute to chill. Filter to a chilled martini glass or a similar vessel, decorate with the cranberries and finish using a light spray with the mandarin essence over the drink.
